It’s the pie that came in from the road.
Floriana Pastore, a World Pizza Champion and one of the top pizza makers in Las Vegas, just opened Signora Pizza, the first bricks-and-mortar rendition of her Signora Pizza truck, known for its traditional Neapolitan pies, its pizza fritta parcels that are stuffed and fried and its wallet pizza that is folded and eaten like an edible wallet.
Pastore recently celebrated the debut of the shop at 651 N. Rainbow Blvd., Suite 120, with an Instagram post showing the team building pies, Pastore working the pizza paddle, beauty shots of finished pizzas, logs stacked for the wood-fire oven and a line on opening day.
The menu at the new restaurant features a half-dozen red pizzas (including eggplant Parmigiana and a signature diavola), four white pizzas (including cacio e pepe), four fried pizzas (including an ’nduja version), and sweets such as cannoli, tiramisùs, and Nutella and pistachio angioletti, the pieces of deep-fried pizza dough that are a Neapolitan street snack.
