Pho Concept Vietnamese restaurant debuts in Chinatown Vegas

Pho Concept, the Vietnamese restaurant in Chinatown Vegas that is replacing Pho So 1 after its 31-year run, is opening Friday and offering 20 percent off during its debut week, through May 1. The influential Chinatown Vegas blog recently reported on the launch, and Pho Concept announced the opening on its Instagram page.

The roomy menu leads with a dozen styles of pho, including bone-in roasted short rib and wok-seared beef, then proceeds through appetizers like garlic fish sauce wings and rolls of ground pork swaddled in translucent rice wrappers, and rice and vermicelli dishes like X.O. crab fried rice and grilled chicken vermicelli.

Spicy beef noodle soup with lemongrass chili broth arrives in the style of Hué, a former imperial city on the central coast of Vietnam. House specialties include Vietnamese crêpes (bánh xèo) fashioned from rice flour batter and sizzling steak and eggs with pâté and fries. About a dozen add-ons for dishes (extra broth, jasmine rice, extra noodles, eggs, beef cuts and so on) round out the menu.
