That didn’t take long.
Egg Works, a Las Vegas breakfast and lunch institution for almost 30 years, closed after service on April 5, on West Flamingo Road. Less than a week later, Omelette Cafe had opened in the space.
The new restaurant is the sibling of the Omelette Cafe on West Skye Canyon Park Drive in northwest Vegas. Chef Ignazio “Iggy” Sessa and his wife, Annamaria Sessa, own Omelette Cafe, Omelet House in Summerlin and Sicilian Guys Trattoria, also on West Skye Canyon Park Drive.
At breakfast
The menu at the second Omelette Cafe, 9355 W. Flamingo Road, Suite 1, features more than three dozen omelets made with an unheard-of eight eggs. The omelets range from a vegetarian Hearty (zucchini, green peppers, mushrooms, onions, jack cheese) to a Sea Serpent (shrimp, avocado, cheddar) to a Sicilian Sessa (meatballs, Italian sausage, mozzarella, marinara).
The breakfast offerings also encompass eggs any style with various meats, eggs Benedicts, egg skillets, buttermilk pancakes, five signature pancakes (including s’mores and red velvet), stuffed French toast, and flapjack, waffle and French toast specials from the griddle.
At lunch
At lunch, look for soup and chili, a half-dozen signature salads (including Cajun chicken or grilled chicken versions), appetizers, a dozen signature sandwiches (including a Monte Cristo and a Chicago-style Italian stacking roast beef, sweet peppers and giardiniera), and several Angus burgers, like a Double Yoke Burger assembled with two half-pound patties, bacon, an over-easy egg, American cheese, green chiles and Thousand Island dressing.
